I'm a tall and lanky guy. Saying this, I have experience in both combat sports and archery. I feel I would be a good marksmen, so I would probably join a skirmisher regiment. Judging my heritage, I am polish, German, and English. So, depending on where I would be born, I would either be a jäger(East Prussian, preferably), a rifleman(95th preferably), or some sort of French chasseur or voltiguer(I honestly have no idea about polish troops, correct me if I am wrong)

Or, with my body type, a light cavalry man.

Edit: If it makes a difference, my family is in the high class. Possibly opens up officer positions?

Poland had no light infantry regiments, except some Lithuanian regiment they made late in the war.

I find it quite entertaining almost everybody would like to become cavalry - just like then.

But he could have joined a voltigeur/chasseur battalion of an ordinary infantry regiment. ;)

I think you mean he could have joined a voltigeur company of a infantry battalion. And yes, naturally, he could. Yellow collars for the win!

I'd probably be in a Line regiment, in the French army of course so that promotions are frequent and rapid :)

Anyway, I would be the captain Napoleon's personal guard, riding on a unicorn and obliterating my enemies in a torrent of acidic semen

Judging by my size, I am guessing that I would probably have been in a heavy cavalry regiment. Pic related, it is me. Do you think I would be fit for heavy cavalry?

Yes, you would defiantly have made it into a dragoon regiment at the very last least.

Depending on nationality well,

As Irish, i'd probably be one of Wolfe Tones revolutionaries aided by the French Republic against the British, as a simple soldier.
As Dutch, I'd be part of the Patriotten, Dutch Republicans aided by the French Republic against the Dutch Monarchy, again as a simple soldier  ;D.

Later on during Napoleons reign, i hoped i would atleast get Grenadier.

While I like to think I'd have made a dashing cavalryman... I'd more likely be an artilleryman if I had voluntarily joined the military (because I'm sort of a nerd :P) or otherwise, maybe a lowly footsoldier (militia) going off to die for his country.
