So I have been looking at the mont saint jean site (http://centjours.mont-saint-jean.com/) showing detailed drawings of the uniforms during the Hundred Days. It is a fine site however it only represents one part of the Napoleonic wars and I was wondering if there are any other sites of similar or better quality. So kindly link said sites if any exist.

Try these
http://www.klittich-pfankuch.de/inter%2013.htm
http://www.uniformen.napoleon-online.de/index.php?/category/1
http://www.grosser-generalstab.de/adjutant.html
They are german, but with a little bit language knowledge it shouldn't be too bad :)

There's also some for the ACW, War of 1812 and Mexican American War.
Go to the links section of Mont Saint Jean.

on http://empire.histofig.com/-Armees-et-Uniformes-.html (http://empire.histofig.com/-Armees-et-Uniformes-.html) you can find some good plates for different nations, but ist on French and only some articles are english.

You know, we could try and make our own uniform plates using Mont St Jean's as base. Could be very useful for anyone trying to make skins.
And it wouldn't be too hard if many of us work on them, considering a lot are already done.

Here you can find over 31 thousands of images from Vinkhuijzen collection http://digitalgallery.nypl.org/nypldigital/dgtitle_tree.cfm?title_id=269277&level=1&tword= (http://digitalgallery.nypl.org/nypldigital/dgtitle_tree.cfm?title_id=269277&level=1&tword=)
And it's also good idea to check whole http://digitalgallery.nypl.org (http://digitalgallery.nypl.org) gallery.
Another site is http://warfare.uphero.com/index.htm (http://warfare.uphero.com/index.htm)
For French units you can look at http://members.upnaway.com/~obees/soldiers/nap_uniforms/cframe.html
But in most cases you should look for specific country or unit. There are plenty of books and websites about units of only one faction. For example for Polish units you should look at Biblioteka Barwy i Broni (http://napoleon.org.pl/) and books like "Wojsko Księstwa Warszawskiego" by Ryszard Morawski and "Wojsko polskie. Księstwo Warszawskie 1807-1814." by Bronisław Gembarzewski. I'm pretty sure that you can find a lot of similar sources for any country. Moreover, informations in books are often more reliable and more detailed. But you can't just sit and say "I want to know everything", you have to find them one by one ;)
