I suppose it's not uncommon for a soldier to do that in extreme cold weather. He unties his pokalem (off duty fatigue cap, as you see here) to warm his ears and puts his shako on top of it.

So, yes I'd say the skin perfectly plausible if you try to go for the winter look.

On the painings the things warming his ears look like they are straight, but on the replica they have these thiner parts to close them (idk how to describe it) what is more realistic?
And on a other note: was it more common to wear the coat pinned up or with them falling straight down?

Go with the replica, the straps at the end are indeed supposed to be more thinner. As for the greatcoat, all buttoned up would be the standard.

One more question: if the soldiers wears the pokalem(at the march as example), where would they carry their tschako? like the grenadiers wore their bearskin on their backpack.

Shakos are very uncomfortable to wear, it's like strapping a bucket very tight around your head. So I take that particulair soldier took his shako off because it was more comfortable and gave his head some relief.
