You're right it was a fairly rare technique since fighting with two swords is a dumb idea as opposed to a sword and a shield. This guy is an expert on swords/armour/weapons etc here's his fight review (he also takes a lot about the history which is interesting imo):
The sword fights in GoT have mostly been okay, some have been absolutely terrible, but there's only one or two really good ones across the six seasons so far. Imo the best realistic sword fight ever depicted on TV/Film is probably Achilles vs Hector in Troy (2004).[close]
