The video quality is rather poor tbh and I can't really put my finger on what's wrong with it. I edit/render my videos with Sony Vegas Pro and the following template:

Is there any chance that could come from the Projet Properties or is it likely some of the options I have chosen while recording with GEForce Experience?

Make sure "Adjust source media to better match project or render settings" is turned off.

Make sure your bitrate is high both in render and on Shadowplay, mine is maxed at 130.

Here's what I use for rendering with my 2080ti an NVENC. Put my render settings below although its been a while since I done an NW video I am sure my CS settings would be fine.
